Ingredients:

1 cup quinoa (rinsed)

2 cups water or vegetable broth

1 cup cherry tomatoes (halved)

1 cup cucumbers (diced)

1/2 cup bell peppers (chopped)

1/2 cup red cabbage (shredded)

1/4 cup carrots (grated)

1/4 cup chickpeas (cooked)

1 tbsp olive oil

1 tbsp lemon juice

1/2 tsp sea salt

1/4 tsp black pepper

1 tsp sesame seeds (optional)

Fresh parsley for garnish

Instructions:

1. Cook the quinoa: In a saucepan, bring water or vegetable broth to a boil. Add quinoa, reduce heat, and simmer for 15 minutes until fluffy. Let it cool.

2. Prepare the vegetables: Chop all veggies and place them in a large bowl.

3. Mix the dressing: In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

4. Assemble the bowl: Combine quinoa and vegetables, drizzle the dressing, and toss gently.

5. Serve & enjoy: Garnish with sesame seeds and fresh parsley. Serve fresh!
